Easy fluffy pancakes!

Easy fluffy pancakes – I love saying these words! Because anyone and everyone who does or doesn’t like pancakes – is going to love these! I am a huge pancake fanatic and I can make pancakes out of almost anything. When I started my culinary adventures, I made them using some crazy Indian ingredients, and not all of them turned out great! But every time I would go back  to make these perfectly easy fluffy pancakes. Because – duh! They were easy which meant every time they were a success. Of course, over time I’ve developed many pancake recipes like Ragi, Oats, and Coconut Pancakes then Ragi, Oats, and Coconut Pancakes and even Whole Wheat Marble Pancakes with Homemade Chocolate Sauce ! These are only to name the few I’ve managed to post here, but it’s an absolute requirement I post this basic, easy fluffy pancake recipe.

Ingredients
  • 1/2 cup all purpose flour
  • 2 eggs separated
  • 1/3 cup milk or 1/2 cup buttermilk
  • 2-3 tbsp sugar more/less. I prefer semi sweet so I added less sweetening as I was going to top it with honey while serving
  • 1 tsp butter melted
  • A dash of cinnamon
  • A few drops of vanilla extract/essence
Instructions
  1. Separate the egg whites and yolks.
  2. Whisk the whites till they form soft peaks.
  3. Mix the rest of the ingredients in another bowl, with the yolks.
  4. Once everything is well incorporated, fold in the beaten egg whites in portions.
  5. Grease a pan. Pour the batter using a ladle - use a tablespoon to make mini pancakes and a 1/4 cup sized cup or ladle for medium sized pancakes. Let it cook till bubbles appear on the surface.
  6. Flip the pancake. Cook for another 30 seconds then it's done.
  7. Repeat with rest of the batter. Serve as per your taste preferences. I served mine with a drizzle of honey and a dollop of butter on the stack of pancakes.
