Best Apple Cake!
Best Apple Cake recipe is here! Haha, I feel like I’m announcing the publishing of my baking book – a far-off and unattainably distant dream. But then! I’m in love with this recipe and so is everyone else who got a slice. Personally, I enjoy a hint of tartness with apple, so, I added a bit of citrus while cooking the apple. And let me tell you why cooking the apple is important.
When you cook it, you’re making sure the excess amount of water content in the apple is not going to hinder the baking process. And that would be the case if you use apples directly in the batter before baking. Again, personal choice. But my reason behind it is how the end result boasts of a smooth texture whenever you bite into a chunk of apple when having a slice. Even the flavour of the apple becomes more concentrated when cooked.

Basic Vanilla Cake
Chocolate Cake with Oreo and Ganache

- 1 1/2 cup apple - peeled, cored, and diced to 1/2" chunks
- 2 teaspoons sugar
- 1 teaspoon lemon juice OR 2 tablespoons orange juice
- 1/5 teaspoon ground cinnamon (dalchini)
- 1 tablespoon butter
- 1 1/4 cup all purpose flour (maida)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup sugar, measure then powder it or use 3/4 cup icing sugar
- 1//4 cup cooking oil or melted buter
- 1/3 cup milk, at room temperature
- 1/4 teaspoon ground cinnamon (dalchini)
- A pinch of grated nutmeg (jaiphal)
- 1/2 teaspoon orange zest (optional but highly recommended)

Heat a pan on low-medium and melt the butter.

Add in the apple, sugar, cinnamon, and lemon (or orange) juice and stir it.

Cook it on low-medium heat till the apple has softened down - takes me about 5-7 minutes. Keep stirring at intervals so it doesn't burn. Once done, let it cool down completely.

Preheat your oven to 175C (350F).

Combine the flour, baking powder, and baking soda and set it aside.

In a mixing bowl combine the sugar and oil, then add milk little by little and keep mixing till all of it is well incorporated. Add the cinnamon, nutmeg, orange zest, and mix well.

Slowly and in parts, add in the flour mixture to the wet mixture. Once you've combined the dry and wet mixtures, fold the cooked apple into the batter.

Pour batter into your prepared baking tray. Bake for 25-30 mins or till the top is light brown and a knife inserted in the center comes out clean. If baking with a loaf tin, the baking time might be longer.

Let the cake cool down before you de-mould and slice!
