Chocolate Muffins!

Easy chocolate muffin recipe is what this is. It’s moist, it’s the right amount of chocolatey, and it’s absofreakinlutely my new favourite recipe by myself, haha!

I’ve used dark chocolate in this recipe to intensify the chocolate flavour to the right proportion.

  • 3/4 cup flour
  • 1/2 cup sugar
  • 1 egg
  • 1 1/2 tablespoons of butter melted
  • 3 tablespoons of chocolate cut into chunks I used dark chocolate
  • 2 tablespoons of milk
  • 1 teaspoon baking powder
  • A pinch of salt
  • 1 1/2 tablespoons cocoa powder
  • 2-3 tablespoons chopped walnuts or any nuts of your preference optional
  1. Heat the milk and pour it over the chocolate chunks. You can also take both ingredients in a microwave safe bowl/cup and microwave on reheat for 30 seconds. 

  2. Mix the heated milk and chocolate chunks until the chunks are well incorporated with the milk. You need a thick consistency.

  3. In a medium sized bowl mix the flour, baking powder, salt, and cocoa powder.

  4. In a separate bowl, whip  the butter, sugar, and egg till the sugar dissolves completely.

  5. Pour the chocolate mixture into the wet mix and stir till well combined.

  6. Add the flour mix to the wet ingredients in portions and fold it in gently.

  7. Once all of the flour mix has been well combined, stop mixing. You should never over mix the batter.

  8. Prepare your muffin tray by greasing it with a bit of butter or cooking oil.

  9. Pour about a tablespoon of the batter into each mould. Make sure to pour fill at least 3/4th of each mould. Sprinkle the chopped walnuts, if using.

  10. Bake for 15 minutes in a preheated oven at 175C. Or till an inserted pin comes out clean.

Recipe Notes

You can double the quantity of the chocolate mixture and use half in the batter and save the other half to be poured over the muffins when you serve them.
