Coffee cake!

Coffee cake with a decadence of chocolate chunks. I’ve always been on the lookout for coffee cake recipes but never had much luck because most “coffee cake” searches on Google would lead to “cakes you can have with coffee” kind of results. And I wanted a coffee cake recipe that included coffee as an ingredient. So after not having any luck with that, I did what I do. I came up with my own coffee cake recipe! It’s spongy, moist, and delicious.

  • 1 cup refined flour
  • 1/2 cup refined sugar powdered
  • 1/3 cup melted butter or cooking oil
  • 3 eggs
  • 1/3 cup or 1/2 cup of chocolate cut into chunks
  • 1 teaspoon vanilla essence or extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons or 3 sachets of instant coffee
  • 2 tablespoons of warm water
  1. Dissolve the coffee in the water and set aside.
  2. Mix the butter, sugar, vanilla, and one egg. Once incorporated, add another egg and mix. Then add the third along with the coffee mixture and whisk till everything is well incorporated.
  3. In a separate bowl, mix the flour, baking powder, and baking soda.
  4. Preheat oven to 175C.
  5. Add the flour mix to the wet mix in portions and fold it into a batter.
  6. Sprinkle some flour on the chocolate chunks and toss them till they are slightly coated in flour. This will prevent them from sinking to the bottom of the pan while baking. (I forgot to do this and my chunks sank!)
  7. Add the chunks to the batter and fold them in.
  8. Pour the batter into a baking pan that has been lined with parchment paper or greased and floured. I used a 6"x6" inch pan.
  9. Bake for 20-25 minutes or till an inserted pin comes out clean!
  10. Let it cool down for 5-10 minutes before de-moulding.
  11. Slice and serve!
