COFFEE MUFFINS – eggless recipe

Coffee muffins!

“Coffee muffins” sounds like a spell I would love to be under on most mornings that feature a lazy mug of warm milk, or even a hot cuppa coffee! The bewitching factor here comes from, much like in my Coffee Cake recipe, using coffee in the very batter. Because a lot of coffee cake recipes and coffee muffins etc feature eatables that are meant to be eaten with coffee at coffee time and the recipes themselves lack any traces of coffee. Or worse, there are coffee muffins and coffee cakes etc recipes that simply add coffee granules to the dry ingredients (flour, baking powder) then add the dry mixtures to the wet ingredients. This does not work in the favour and flavour of the end result. You REALLY need to activate the coffee granules for the aroma to properly permeate and enhance the batter.

For the cousin

The very reason this coffee muffins recipe came into existence if because my very dear cousin is in town for a few days and I wanted to bake her something nice. Since I was short on time (I had about 1 hour to prepare, bake, and pack baked goods for!) I went for the obvious and quickest option available to me. Muffins! It takes hardly 10 mins to prepare the batter and baking tray then an additional 12 minutes to bake it. Which leaves you with ample time to accomplish other things. As for the flavour – it was a no brainer as my cousin is a huge coffee fanatic.

The perfect teatime snack for a coffee lover! Anyone who like the coffee flavour would love this. It's simple to make, and even easier to munch down. Try pairing it with a glass of warm milk or with some Netflix post midnight.

Servings: 12 muffins

  • 3/4 cup all purpose flour maida
  • 2 tablespoons melted butter
  • 1/3 cup milk, at room temperature
  • 1/3 cup sugar powdered
  • 1 tablespoon instant coffee powder
  • 1 tablespoon warm water
  • 3/4 teaspoon baking powder
  1. Preheat oven to 175C.

  2. Mix the flour and baking powder and set aside. 

  3. Add the sugar and butter to a bowl and mix them by adding little bit of milk at first till you get a smooth consistency then add all of the milk. 

  4. Mix the instant coffee powder and warm water, then add that to the wet ingredients. Whisk until it is well combined.

  5. Slowly add the flour mixture to the wet ingredients and fold the flour in. Do not over mix the batter, Stop mixing once the lumps have disappeared.

  6. Grease a muffin tray. Spoon in equal amounts of batter in each mould. Make sure you fill them either up to 3/4 of each or almost to the brim.

  7. Bake for 12-14 mins or until the tops have cracked and an inserted pin/skewer comes out clean.

  8. Let the muffins cool down a little before you try to remove them from their moulds. My trick to remove them safely is by gently twisting and shaking the top of each muffin. Do whatever works for you! Enjoy!

      Hey! Thank you! I think there’s some confusion. This is the eggless Coffee Muffins recipe. I think you tried the chocolate muffins which are an egg version or the coffee cake recipe. And yes! You can totally replace the eggs with milk or buttermilk (I usually make buttermilk by mixing equal parts of milk and curd). Thanks once again!
