Easy Apple Cake Recipe!

Let me begin this post by admitting I’ve been proven wrong about apple cakes. This easy apple cake recipe uses apples directly without cooking it before adding it to the batter. However, in my previous Apple Cake Recipe post I talked about why I prefer cooking the apple before add it to the batter. Now, I do stand corrected that it’s not a bad idea at all to use them directly. Does this negate my earlier statement that the Best Apple Cake is best made with cooked apple instead? Um, I’ll take the diplomatic route and just say now that I love both the methods I will still say I love the cooked one BUT this method cuts down the prep time by 10 minutes. The cooked version has a pineapple-y flavour profile and is buttery. Whereas this method retains the texture of the apple so get a bit of a bite from the apple after being baked.

So, I’m torn! I’ll choose this on the days I’m feeling lazy and know exactly what kind of apple cake my tastebuds are cravings. And the other one when I’m craving that version. Simple!

Easy Eggless Apple Cake Recipe

For the apple:
  • 1 cup apple – peeled cored, diced
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon ground cinnamon
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/5 salt
  • 1/2 teaspoon ground cinnamon dalchini
  • Optional - 1/4 teaspoon grated nutmeg
  • 1/3 cup sugar measured then powdered
  • 3 tablespoons melted butter or cooking oil
  • 1/2 cup milk
  • 1 tablespoon yogurt / dahi
  1. Preheat your oven to 180C before you start preparing batter so your oven preheats for at least 10 minutes and you don’t place the batter into a cold oven. Very important step!
  2. Mix the apple, cinnamon, and lemon juice then set it aside.
  3. In a bowl, combine the flour, baking powder, baking soda, salt, cinnamon powder, and grated nutmeg.
  4. In a mixing bowl whisk the sugar and oil. Then slowly add in the milk.
  5. Lastly, add the yogurt. Combine well.
  6. Add the dry ingredients to the wet in parts and mix. Try to fold the batter instead of whisking it vigorously. Just be gentle and stop mixing once it looks just-mixed. It’s okay if it’s a little lumpy, it’ll be fine as it bakes.
  7. Add the apple to the batter. Fold it in a few time, do not overmix.
  8. Prepare your baking tray by either adding parchment paper or you can simply grease the tin with oil then dust it with a bit of flour.
  9. Pour the batter into the prepared mould.
  10. 10. If using a small 6” mould then it’ll take about 40-45 minutes to bake. If using a larger mould it’ll take about 25 minutes to bake.
  11. 11. Bake in your preheated oven at 180C.
  12. 12. Once the top is a golden caramel brown, take it out and do a knife test. Insert a knife and if it comes out with any wet batter, it’s done!
  13. 13. Let the cake cool down before you demould or slice it.
  14. 14. Enjoy!
