HEALTHY GARLIC CHILLI CHEESE MUFFINS – Savoury Muffins

Garlic Chilli Cheese Muffins! Savoury muffins, yasss!
They were an instant hit with my Instagram audience, which was pretty unexpected for me. I didn’t start writing this recipe until people started messaging and commenting on Instagram, asking when am I going to share the recipe. I’d really like to take a moment and thank my readers for their patience and love. All of this support means a lot to me!

And I guess, everyone who is into savoury foods just needs a quirky, healthy recipe to entice and satisfy their taste buds. I hope you enjoy them as much as I did! Here are some more of my healthy recipes:

Ideal guilt-free snack! Try it with some ketchup or spicy chutney to amp up the experience.

Servings: 8 muffins

Ingredients
  • 1/2 cup rolled oats (or 3/4 cup instant oats like Quaker or Kellog's)
  • 1/4 cup whole wheat flour (atta)
  • 1/3 teaspoon salt or as per taste
  • 1/2 teaspoon dried garlic or more (or 1 tablespoon freshly grated garlic)
  • 1/2 teaspoon baking powder
  • 1/5 teaspoon baking soda
  • Chilli flakes as per your spice tolerance
  • Mozzarella cheese cut into 1/2" cubes - you need 8-10
  • 1 egg (or 1/3 cup buttermilk = 1:1 ratio milk and yogurt mixed and set aside for 10mins)
  • 1 1/2 tablespon milk
  • 1 tablespoon vegetable cooking oil
Instructions
  1. Preheat oven to 175C.

  2. Mix the dry ingredients except the cheese. 

  3. Add the wet ingredients and mix until well combined.

  4. Grease your muffin tray.

  5. Spoon 1/2 tablespoon of mixture into each mould or fill 2/3 of each. 

  6. Place a cube or piece of mozzarella in the center of each. And press it a little so it stays in place, slightly buried in the mixture.

  7. Spoon 1/2 tablespoon of mixture on them or the required quantity to seal the cheese in place.

  8. Bake in a preheated oven for 13-15 minutes or till the top is visibly golden brown in colour. Or insert a pin/skewer into one, if it comes out without any traces of raw dough, it is done. But yes, traces of the cheese might show up to. So, do distinguish!

  9. Enjoy while they're still hot so you can relish the oozy, cheesy center! Serve with ketchup or spicy chutney and some chai (or coffee or any hot drink!)
