Cherry Tomatoes recipe – easy! There were some cherry tomatoes in the fridge and I had no idea what to do with them. And then, this happened.

This is one of the easiest and flexible recipes. It can be a spread for your morning toast, a side for an egg or sausages with breads, and it can also act as a side dish for your lunch or dinner.

If health conscious make it with olive oil, but if not - try it with melted butter. Some people love the taste of buttery foods, so if you are one of them - feel free to venture that way.

  • 2 cups cherry tomatoes, halved or 2 cups regular tomatoes, diced
  • 2 tablespoons olive oil or melted butter or canola oil
  • 2 tablespoons honey
  • 1 teaspoon garlic, grated or 1/2 teaspoon garlic powder
  • salt to taste
  • pepper to taste
  1. Preheat oven to 200C.

  2. Halve the cherry tomatoes, you need 2 cups. Or if using regular tomatoes, make sure they are diced into 1" big pieces.

  3. Grease your baking tray with a bit of olive oil or butter.

  4. Lay the tomatoes with the cut side up and the skin side down.

  5. Mix the rest of the ingredients in a small bowl and spoon it over the tomatoes.

  6. Bake for 10-15 minutes or till everything has softened, is mushy, and bubbling.

  7. Serve hot with - a slice of toast and an egg, or as a side dish. This is a flexible recipe, do with it what you want and enjoy!

Recipe Notes

Serving suggestionsTo use as a savoury breakfast spread - once it's done baking, mash the tomatoes a little using a fork. Toast some bread, lay a piece of an omelette or a fried egg over it, top it with some honey roasted cherry tomatoes - and devour!

To kick things up even further - add a dollop of cheese spread on the roasted tomatoes, or a slice of cheese, and close it with another slice of bread. Your gourmet sandwich is ready!
