Microwave Coffee Mugcake Recipe


Or should I call it my quarantine madness recipe? I’ve been in self-quarantine since 16th March. Today, 16th March, marks 1 month of not having stepped out of the house. But over these weeks my productivity has reached new heights. I’m popping out new recipes like a pressure cooker popping popcorn. It’s fun, exhilarating, and sometime the feel-goody kind of tiring. I love it.


So far I’ve been sharing these lockdown recipes on my Instagram’s IGTV.  But I’ve also started posting the same videos on YouTube. So, even non-Instagrammers can enjoy these recipes. What’s been truly motivating is that within an hour of sharing recipes on Instagram I start receiving messages and pictures from my readers of them trying those recipe. With the lockdown, everyone has enough time nowadays to cook and bake. And I love how many of you honour my recipes by letting them breathe in your kitchen.


Now that there’s no going to cafes and all for that addictive up of cappuccino or latte, I keep finding ways to get innovative with my coffee intake. So, here’s one of those. Many of my Instagram readers have already tried and loved this one. I hope so do you.

Microwave Coffee Mugcake Eggless Recipe

What's better than having a mug of coffee with cake? Having this coffee mugcake!

Servings: 1

  • 1 and 1/2 teaspoon instant coffee powder I used Nescafe Classic
  • 1 tablespoon sugar
  • 1 tablespoon water
  • 1 teaspoon oil or melted butter
  • 3 tablespoons milk at room temperature
  • 2 and 1/2 tablespoons all purpose flour maida OR use whole wheat flour (atta)
  • 1/4 teaspoon baking powder
  1. In a microwave proof coffee mug or bowl, take the instant coffee powder, sugar, and water. Mix till it dissolves.
  2. Add in the milk and oil then mix till combined.
  3. Add in the flour and baking powder. Combine.
  4. Once it's smooth, microwave it on the reheat mode for 2-3 minutes. Once the top is no longer gooey, you'll know it's done. Enjoy!
