No Bake Strawberry Cheesecake Shots made with Yogurt(dahi) and Cottage Cheese(paneer)!

Not only is this no bake strawberry cheesecake recipe easy to whip up at any given time, it’s also on the healthier side of things. I think it’s easily one of my favourites to make. Whenever I’ve got hold of fresh strawberries, this is something I love making for my dear ones. It helps heaps that in my family we’re all into eating healthy and our sugar preference is generally things that are either semi sweet or just sweet. This recipe requires some Strawberry Compote. No Bake Strawberry Cheesecake Shots

I've used cutting chai glasses here, you can use whatever you prefer. You can also use a casserole to make one cheesecake.

Servings: 8 -10 shots
Strawberry Compote
  • 1/2 cup sugar
  • 2 cups chopped strawberries
  • A pinch of cinnamon powder
  • 8-10 digestive biscuits, powdered
  • 1 1/2 tablespoons butter, melted
  • 200g cup yogurt/dahi or hung curd
  • 200g paneer, grated
  • 1/5 cup sugar, powdered
  • 1/4 teaspoon vanilla extract/essence
Strawberry Compote
  1. Add the strawberries to a pan, add the sugar, and give everything a stir.

  2. Turn on the heat to low-medium. Keep stirring every 30 seconds to avoid burning the strawberries.

  3. Once it starts bubbling, reduce the heat to low, and allow the compote to simmer for a minute. Keep stirring to avoid burning. Once all the strawberry pieces have cooked through, turn off the heat.

  4. Allow the compote to cool down before using - or simply refrigerate it till you need to use it. 

  1. Combine the powdered digestive biscuits and butter till well incorporated and crumbly.

  2. Fill each glass (or whatever mould you are using) up to 1 inch with the crumble. Lightly press it down a little. Refrigerate for 20-30 minutes.

  1. Blend the yogurt(dahi) and grated paneer till smooth. Add the powdered sugar and combine till well incorporated.

  2. Equally divide the mixture into two bowls. To the first one, add the vanilla and mix well. To the other bowl, add half of the compote and mix well.

  1. Take the vanilla mixture and spoon it into the prepared glasses over the digestive biscuit crumb layer. Make sure they're evenly distributed. 

  2. Over that, spoon in the strawberry cheesecake mixture into each glass, evenly. 

  3. On top of that, add the remaining half of the compote. 

  4. Refrigerate for a minimum of 45-60 minutes before serving. You can make this and refrigerate it overnight to be consumed the next day. But do not exceed 1 day of gap between making and consuming or else it might turn sour.
