This Roasted Rosemary Chicken recipe has been my go-to on many occasions. One of them being my Stuffed Braided Bread recipe. That recipe, is a hit. It wows the crowd when we have guests over, and moreover – they want to keep coming back for more!

The Roasted Rosemary chicken recipe in the Braided Bread is designed purely out of the purpose of a stuffing. The one below has been crafted for other purposes – like a main dish.

I made it for lunch – mom had a piece with her India lunch platter, my sister had it with a bit of brown rice, and I had it with the baby potatoes. My protein and carbs were sorted.

How many potatoes or baby potatoes you want to add is entirely up to you. I could’ve added more but my family wasn’t interested as they already were sourcing their carbs from elsewhere. Here’s how you make my signature Roasted Rosemary Chicken –



  • 3-4 large pieces of chicken legs – or 8-10 smaller and regular cut pieces (the kind you get for curries)
  • 10-15 medium sized cloves of garlic (use more if they’re tiny, less if huge)
  • Optional – 10-12 baby potatoes or 2 large potatoes cut into 6 pieces each.
  • 2 large onions, diced or cut down to 12 pieces each
  • 1/3 teaspoon of salt – or as per taste
  • ¼ teaspoon of ground black pepper – or as per taste
  • 1/3 teaspoon of rosemary – dried or fresh
  • ½ teaspoon of oil



  1. Preheat the oven to 200C.
  2. Wash the chicken.
  3. In a large bowl combine all the ingredients except for the oil.
  4. Grease your baking tray with the ½ teaspoon of oil.
  5. Transfer the ingredients to the tray.
  6. Bake for 35-40 minutes. After the initial 25 minutes, take the tray out and turn the pieces over to let them get an even bake. Place the tray back and continue baking.
  7. You will know the meat has cooked through when you poke or pierce the meat with a knife and the juices run clear.
  8. Enjoy!
