In a bowl, combine the flour, cocoa powder, baking powder, and baking soda.
In a separate bowl, combine the water, milk, and instant coffee powder.
Slowly, pour the wet mixture into the dry ingredients and mix till they're just well incorporate and lump free. Then stop mixing. If you overmix, the pancakes will come out dense and chewy instead of soft and fluffy.
Heat a pan over low-medium, add the butter (or oil). Spread it around. Once the pan is hot enough, add 2 tablespoons of pancake batter. If it's a big pan, you can 2-3 pancakes at a time. Just space them 2-3 inches apart as they will spread.
Let the pancake cook for a minute or so, until bubbles form on the surface, then it's time to flip.
Cook for another 1 minute after flipping.
Repeat with the rest of the batter till there's none left.
Serve hot with sauteed cinnamon apple and a scoop of ice cream or simply with some fresh fruit and juice for your health breakfast option.
